I'm usually pretty careful about this stuff when I put a PC together. Although I often neglect it when upgrading components. I don't take overclocking into consideration because I never bother doing that.

And we have to remember that total Wattage is just a small part of the equation. There are many other things to take into account such as how many amps are available on the 12v rail(s), rail stability, component quality, efficiency etc.
Just because a PSU is rated 750W doesn't necessarily make it better than a quality 600W for example.
