Look at the Asus EEE PC 1000H. I just purchased one for my scuba diving trips so I can check e-mail, download photos from my camera, and get to my servers if something bad happens.
It's based on the Intel Atom processor, has an 80 gig hard drive, 1 gig of ram, integrated ethernet, 802.11 b/g wireless, bluetooth, 3 USB 2.0 ports and a SD card reader. Both the hard drive and ram can be upgraded, unlike many of the "sub" notebooks. The keyboard is actually usable and it has decent battery life. You can get it flavored with XP home or Linux and there is a driver disk included so you can wipe it clean if you want.
It doesn't have an optical drive and it's not a speed demon but at $440 it's a steal.
The AcerOne might be worth a look too - Atom, and either an 8GB SSD or 120 GB HD, 1024x600 res, similar deal. It allegedly comes with an optional big battery pack that can power it for 7 hours, which would be good for long meetings if it gets close.
