I am trying to create some coop missions, but the mission information ie airfields, targets and waypoints don't appear on the briefing map. How do I get them to show ?

I don't make co-ops so I can't give the info you need here but the manual explains it - I know it does because I saw it there only the other day when I was looking something else up.

I think you see the information only after you have chosen an aircraft, because every flight has its own waypoints.

Do you use this format for your briefs?
<ARMY NONE>
general info, select a plane, then check the brief for your side, etc.
</ARMY>
<ARMY RED>
brief for red...
</ARMY>
<ARMY BLUE>
brief for blue
</ARMY>
If you use this format, I believe you will get a map with waypoints, etc.
Be sure to "own" an airfield, by placing at least one blue or red object on it, like a flak gun. If you don't the field will stay white on maps.
Zip
