Where are the graphic mods?

Render Options in the video section.

and it's greyed out and only lets me keep it as "default".

Use the console command:
\r_rendermode #
but replace # with number between 0 to 4:
0=Default
1=Improved
2=Paradise
3=Cold
4=Cartoon(cel-shaded)
It always works for me.

Hmm maybe your graphics card doesn't support those modes? I think your card will have to support pixel shaders.

You need to have special effects on High or Very High. I fell for the same problem http://ubbxforums.ubi.com/infopop/emoticons/icon_smile.gif

PS try out cold. It really looks AMAZING.
