On PC or MAC, 3rd party image capture software. One example that is commonly used is http://www.fraps.com/ but you'll need to buy the full version if you want hi-resolution recordings. The free version has limits.
There are other software packages that do the same thing as well, if you're on a MAC you'll probably have to find one. I don't think there's a fraps version for MAC.
For consoles, you'll need some sort of video recording link between the console output and a set top box or computer with image capture features. Anyone help on the details for this? I"ve never bothered to work out how to do it for consoles, I'm primarily a PC man ;)
