Just set your flight waypoints similar to the bombers. You can also set your flight on the runway behind a flight or two of bombers taking off. This way your flight is flying - for a little while - to catch up with the bombers. Another tip is to start a flight in the air 2 or 3 kilometers behind the bomber formations already on the way there (normfly option).
Hope this helps,
Rick
ps: it really is all about timing. This is something you can do by test flying the mission from the mission builder. The same place where you go to save (file option) there is also an option to run the program i.e. mission - just click on PLAY. Remeber to save it first after you make changes.

Place a fighter bomber waypoint where you want the escort to start.
Place a fighter waypoint near the bomber waypoint.
With the fighter waypoint selected, bring up the "View/Object" dialog box and select the waypoint tab.
Press the "Set" button and select the bomber waypoint. The fighters will now fly escort until they reach their next waypoint.

When I use the target escort option it always assigns a bomber flight as the primary escort. It seems to give your flight a specific flight of planes to escort. In other words - you can assign a flight of fighters to escort a particular bomber flight.
It may also pertain to setting the escorting flight as the target for the other side.

The Target objects set the victory conditions. If you want it to be a condition of victory that 50% of the bombers reach the target, set the "Escort" target with a time out long enough for the bombers to reach the target. If that is the only target and the required 50% are still flying when the timeout expires, the side for whom the target is set will get a "Mission succesful" message.
If you don't set some fighters to either escort the bombers or attack enemy fighters that are attacking the bombers, having the "Escort Target" set is unlikely to make them do so, though in some cases they will do it anyway in self defence.
