IL-2 & PF have chocks and canopies as commands? Possibly the chocks may only be on carriers. About the canopy, I think I might be thinking of the wrong game.

Carrier based planes have the canopy function and the seatposition can be adjusted for better view---> if modeled, Chocks are available only at carriers for all of the planes. All to be set from controls. RT()M.

I've downloaded one or two missions that had chocks on ground based planes too.

Yes, if the mission maker used the Temporary Runways, you will have to release chocks.
