This was purely accidental I hope it will work for everyone.
Before turning on the Xbox, we setup a webcam session with our computers. I'd believe this caused our lines to be direct with each other, so it created a stable connection when we played Co-Op game.
We played for over an hour today and no crashes. Before this method, it crashed within 30minutes. He's playing from New York and Im in California and the Co-Op game with out lag.
I dont know the specs with our XBox's, but we have our webcam sessions using Apple computers. He has PowerBoook, I got an eMac. We use iChat program for the webcam session and we both use the iSight webcams.
I hope everyone will get the same result. Enjoy!
