Where is the setting for the server name? I can't seem to find it.

In your binaries folder.
C:\Program Files\Ubisoft\Tom Clancy's Rainbow Six Vegas 2\Binaries

It should look something like this:
You can register another user name if you like:

Server name is the UBI account name. You need to set up a UBI account ahead of time. Another "lack of thinking" moment for the UBI dev team.
