Cruising along I get jumped by 6 Sunderlands - what a useful invention the snorkel is!
Anyway I try to evade but obviously they follow the wake of the snorkel and persist in DCing me mercilessly.
I have the last laugh when 2 of them get a bit 'target fixated' and crash into each other!

I've seen that quite a few times. Once I played a broken mission where the planes wouldn't stop spawning. We had over 40 aircraft storming us in the patrol. They were constantly colliding.

Don't try to get away with your snorkle out.
They can track it with radar and see it with thier eyes.
Once they find you, you need to cut yourself off from the surface. And you should stay cut off for several hours since once one set of planes finds you others will be vectored to that area.

Equip your boat with a type 3 conning tower and heavy flack guns in all 3 positions and you can shoot them down all day long. I think my single mission record for planes is 72 and 58 were sunderlands. It's great fun and they don't stand a chance. I always turn so they are approaching me from 90 degrees port or starboard so that all three guns can get in on the fun. Leave your radar on and they just keep coming.

It's great fun indeed to shoot down sunderland like turkeys, but I always seem to encounter those particularly pesky Hurricane fighter-bombers.
My crew always shoots valiantly at them, but they always seem to get away, preferably with a bomb in my boat, like here:

It's now november 1941, but from when do the sunderlands start to appear? I always encounter those Hurricanes, but never such a nice, slow, lumbering fresh-to-kill Sunderland.
