Well, I have never made one myself, but I would guess that you would get ALL KINDS of raw footage in the form of track files in the game. Once you have the track files with the actual gameplay that you wish to use in your movie (again, I haven't done this, but I am guessing that this is A LOT of stuff), you need to capture the video in a popular video format to your harddrive. Once that is done, I am guessing that you would then add special effects and touch-ups to the videos...and then mash them together into one long vid. Once that is done, you probably then encode the video into something of downloadable size using an encoding algorithm...like Divx or WMV.
All guesswork by me, but it sounds right (and like a lot of work). Some of the movie pros may be able to help you out some more....
