Nope. That's the only way to save, so of course it can't be turned off.

I'm very curious to know why you'd want to, though.

Which platform are you on? Try installing the game to the hard drive. If you already have done this you may need to remove it and reinstall.

i have the same problem but worse !!!

i'm on ps3 and my game just freezes every 10 sec for like even more seconds wen its saving

I've got the same problem as well (PS3 version), but its more common when I'm riding a horse. It pauses for about 2 seconds for me.

That happens to me to, not always but sometimes it freeze in 2 seconds and sometimes i need to turn the Playstation 3 of and then open the game again. its really anoying
