The Rookie planes are unlocked when the mission is completed, but you need to complete the Bonus Objective to unlock the Pilot and Ace planes.

I assume Pilot planes are also unlocked if you skip ahead and get the ace ones?

Yep, you get the Pilot (and Rookie) unlock if you complete the mission on Ace.
