I think there is only one Single Player mission which has the P-51 against the V-1 rocket in the air. You'll find it under the GB (Great Britain) missions.

If you want to do this with another aircraft (Spitfire), I'm afraid you'll have to load that mission into the Full Mission Builder, and change the aircraft type to one of your choice, or make your own mission from scratch using the V-1 and aircraft of your choosing.
