By using DIMMs of a larger capacity than is rated, i.e. a 2gb DIMM in a slot rate for 1gb DIMMs.

Not if a system still runs DDR(1)...
In some cases with a bit older system that suport DDR2 its says maximum of 2GB (2x1GB) suported, but that may simply be because wen the text was written there was no DDR2 2GB SODIMM modules.

Well, inserting a higher capacity DIMM than what the system is rated for will probably result in the system not even passing POST.
Some systems can be very picky about RAM. Even the wrong brand might result in it not starting up. The EEEPC e.g. is known for it's random-like accepting some SO-DIMM memories and refusing others. Even within the same brand+type.
I never tried this. In general I check the documentation first to see what the manufacturer advices.
Camp may very well be right too and it may just work.
