Hello I was considering purchasing the Da Vinci Disappearance DLC but I thought that if I bought it I would not be able to play multiplayer with my friends who do not have it. Will I still be able to play with them even though I'm the only one with the DLC?

No, you can not. If you're using DLC 3 you can only play with people who have it aswell. But you can switch between the DLCs so that you are able to play with those that don't have it.

You can not play with them but you can downgrade and disable to update in the option whenever yuo want to play with them just go to options and then downloadable content and turn the update off.
