I've got a big stack of the same DVDs at home thanks to them... and no idea where to start either. D: I just kind of stare at it and cower. Too many choices!

lol. if you had gotten bleach, everything would be easier.. idk, I'd suggest just reading the back and seeing which one interests you the most. and just watching it then. because idk if you can tell, but some people are fanatic about their favorite anime... *cough*

I hope does are just some of your anime collection. I love Full Metal Panic the first and second season, Full Metal Alchemist. My all time favorites are the first ever Gundam, and Zeta Gundam.

Wow! That was really nice of Funimation. What a crazy amount of movies they gave you. I wouldn't know where to start either. I'd say go with Moe's suggestion. I watch anime here and there, but I'm not familiar with some/most of those.
Fear the plush army/minions.

This isn't even on your list, but...
You NEED...NEED to watch Nana if you aren't doing so already. It's still a continuing series by Ai Yazawa, who wrote Paradise Kiss (not sure if you saw that one or not, but it's really short and is now being licensed by Viz in the US, I think)...
So far Nana is up to 44 subbed episodes, a new subbed episode comes out every week or so.

Afro Samurai got a lot of hype due to it premiering on Spike TV and voiced by Samuel L. Jackson. Of course, the series is hyper violent with lots of blood.
Personally, I'd definitely recommend Fruits Basket. I enjoyed both the anime and mange as it is very cute and shoujo. Also, the manga is one of the top selling series in the US.
