When we hear a game has been streamlined for the mass market or mainstream audience that means thats its been dumbed down. Several franchises, not just Ubisofts ones have suffered through this ignorance.
Would it not be better to better explain the depth of a game through a complete and fun tutorial rather than just cut anything complex. Depth is whats gives a game legs. Its what makes people love the game. Some of the best rated games on the current generation of consoles are not what you would call streamlined. They offer tons of depth and varied gameplay.

Bioshock
GTA 4
Oblivion

I think it is because the pencil pushers have no idea what makes a good game.
I recently noticed here on the Ubi forums, that 2 games have the predominence of the posts made here and they are hardcore flight sims. Those two games appear to be the most popular here on the Ubi forums and something brought up in the Vegas 2 forums bear that out.
Someone was asking how popular V2 was and someone reported that 3 players were waiting between 59 servers. Well, there must be 20 or so regular posters in the Vegas forums combined while there are many more posting in the iL2 forums. Now forum goers make up a small percentage of gamers so one can deduce that if that is the case, the iL2 franchise is wildy popular compared to what is seen online compared to a mainstream game like V2. Who cares that it may have sold a couple of million games? It is not played anymore after 6 months while gamers are still buying and playing games in the iL2 series 7 years after the 1st game came out.

because its the easiest excuse we can give.....
-the reality is that the mainstream is willing to accept "realistic" gameplay because they know it adds to the game...the fact that main characters in games mostly carry 2 weapons nowadays instead of the full human armory is grounded in realism and helped add depth to games........what bugs them is when they see the self proclaimed "realistic" games claim realism through cumbersome user interface...
devs (the ubi house in particular) has sat stagnant and let the presentation of their games go mainstream but not its gameplay.....mainstream means accessible to everyone, it doesnt mean simplified....why do we still have to see dials to signify reloads and weapon changes??
the best realism is the kind of realism that isnt noticeable and fits organically within the game.....Halo gamers may not know that only carrying 2 weapons at a time is grounded in realism all they know is that it adds depth and forces them to make choices in their game....that is how most realism should feel.
botom line..mainstream isnt dumb, devs would rather just prefer to use that as an excuse so that only military uniforms and weapons are necessary to claim realism in their product...(broad generalization i know)
