I finally got this game to work like it's supposed to.
After weeks and weeks of fiddling with all kinds of junk to try and make this game playable, I've finally done it. I can run the game on the settings it recommends for my system just fine. No crashes so far and no graphical glitches. The bad part is now I finally realize how much I suck at this game..... http://forums.ubi.com/images/smilies/35.gif

Ha, no, but it seems like it may have to come to that for some people. Really, I think all I did was uninstall my current video driver, run Driver Cleaner, and install the newest one (97.92 or something like that for the 8800 series, beta from Guru3D.com). I did have a problem with the game not running in DX9, but I somehow got that fixed as well. A word of advice, if you think, bah, I just install my new drivers over the old ones, big deal...wrong. I thought that once, but not anymore. Before, I had horrible scores with 3DMark06. After running Driver Cleaner before installing my new driver, I'm getting scores that are respective to the hardware that I have. Please, if you haven't done that yet, do so now. It fixed my graphical problem and now I'm getting over 200 FPS on near max settings.
