when i dled the stunt island thing, i put it under "levels", but then how do i actually PLAY it? i went to "launch game" but it went to the normal level, but with REAL BLUE water.

Go around the right of the major island and you'll find another island with a generator, blown-out tank, skeleton guards, etc. Make sure you have the assault choppers off though. God-mode won't help you there.
